Uji Craftsmanship

Our matcha is traditionally stone-ground using slow, meticulous methods that preserve its delicate aroma and create a rich, layered flavor. After generations of refinement, tea masters have found that a millstone size of 1 shaku 1 sun (approximately 33.3 cm in diameter) produces the ideal matcha texture. This carefully balanced size has become the modern standard for achieving the best flavor, color, and whisking performance.

Uji Tea Farm

Uji, located near Kyoto, is one of Japan’s most renowned matcha-producing regions, celebrated for its centuries-old tea cultivation traditions and exceptional quality. However, tea production in Uji is highly fragmented, with many small-scale farms continuing traditional practices. While this preserves authenticity, it also presents challenges; particularly in meeting stringent EU pesticide regulations, which a significant portion of matcha from the region may not consistently satisfy.
