The Richest Japanese Matcha Ice Cream I’ve Ever Made

I really, really love this one.

This is the rich, creamy Japanese matcha ice cream I remember from Japan. Nothing like most I’ve had in Europe. Sorry, Europe, no offense. 

The original recipe uses a Japanese matcha brand I’ve always loved, and I had to try it with our Matcha #03.The result?

Rich, creamy, intensely matcha forward, and exactly what I look for in a matcha ice cream.💚

And because a little crunch makes everything better, I layered it with pieces of my favorite crispy protein bar for a parfait-style finish.

Ingredients

  • 3 egg yolks
  • 80 g fine granulated sugar
  • 250 ml heavy cream
  • 20 g matcha

For the Parfait Layers & Crispy Crunch

  • Your favorite crispy protein bar, cut into small pieces

How to make it

1. Whip the egg yolks & sugar
In a large bowl, whisk the egg yolks and sugar vigorously for 5–7 minutes, until the mixture becomes pale, thick and fluffy.

To check if it’s ready, lift the whisk — the mixture should fall slowly in a ribbon and remain visible on the surface for a few seconds. That’s your sign that enough air has been incorporated.

2. Add the matcha
Sift the 20 g of culinary matcha in to heavy cream, then whisk until soft peaks form.

3. Fold in the cream
Gently fold the egg yolks mixture into the matcha mixture with a spatula, using a bottom-to-top motion to keep the mixture light and airy.

4. Freeze
Pour into a metal container and freeze for at least 4 hours.

Texture Tip: For an extra-creamy texture without ice crystals, stir the ice cream with a spoon once every hour during the first 2 hours of freezing.

5. Build your matcha parfait
Scoop the ice cream into a glass, then add pieces of crispy protein bar between each layer. Keep alternating until you reach the top.

6. Make it a full matcha moment 🍵
For an even more intense and indulgent matcha experience, enjoy it with a bowl of freshly whisked Japanese matcha on the side.
