Naturally Sweet Coconut Matcha Cloud Recipe (No Added Sugar)

Looking for a refreshing, healthier summer matcha?

When the weather gets hot, I usually don’t feel like drinking a heavy latte. This Sugar-Free Coconut Matcha Cloud has become one of my favorite summer drinks because it’s naturally sweet from coconut water, refreshing, and only takes a few minutes to make.


Ingredients

  • 200 ml chilled pure coconut water
  • 100 ml cold coconut milk (full-fat works best for a creamy foam)
  • 4 g Tea Studio Lu Ceremonial Matcha, sifted
  • Ice cubes (optional)



Step 1 – Prepare the Coconut Water Base

Pour the chilled coconut water into your favorite glass. That’s it for the first step—it’s that simple!

Tip: If you’d like an extra-cold drink, add a few ice cubes. I usually skip them, though, since they can dilute the naturally sweet coconut flavor.

Step 2 – Make the Matcha Cloud

Pour the cold coconut milk into a tall glass or measuring cup. Sift the matcha directly into the coconut milk to prevent any clumps.

Using a handheld milk frother, whisk for about 45–60 seconds until the mixture becomes thick and creamy enough to float on top of the coconut water.

Step 3 – Layer the Matcha Cloud

Slowly pour the matcha foam over the back of an upside-down spoon held just above the coconut water. 

Alternatively, if you used ice, skip the spoon, simply pour the foam directly over the cubes, which will naturally catch the cloud to create perfect layers.


Why I like this recipe

I keep coming back to this recipe because it’s refreshing without tasting overly sweet. The coconut water adds just enough natural sweetness, so there’s no need for sugar, while the ceremonial matcha still shines through with its fresh, slightly umami flavor. It’s also perfect on hot summer days since there’s no hot water involved, and everything comes together in just a few minutes.
